Who we are
Garlic Scape and White Bean Dip
1/2 cup garlic scapes, chopped
1 Tbs. lemon juice
1 15 oz. can cannellini beans
1/4 cup (or more) olive oil
1/2 tsp. sea salt (more to taste)
Puree all in blender (drain beans mostly) - drizzle in olive oil and 2-3 Tbs. water if needed for consistency (I usually don/t)
Put in bowl, drizzle a little olive oil over, sprinkle with sea salt if you want.
Great with bread, chips, pita, veggies - you name it! Proportions are all optional...it's all to taste, but the combination of raw garlic scapes and white beans is wonderful.
